The Best Oatmeal Ever? We think so.
When my husband and I first started dating, I remember him making the most grossed-out face when I asked him if he liked oatmeal. This morning, he went for seconds.
I’ve been telling one of my clients how amazing oatmeal can be, and when I promised her I’d send her my recipe today, I figured why not share it with the world?
Oatmeal is like anything. Sure, it can be lame and boring, but when done properly, it can also be downright fantastic. Here’s my recipe for the latter.
This amazing oatmeal recipe is full of fibre, protein and antioxidants. Remember to drink lots of water if you’re upping your fibre for digestive purposes. 😉
Ingredients ~ I made a double batch. This stuff goes fast now that Kev loves it so much.
2 cups of Bob’s Red Bill Steel Cut Organic Oats
6 cups of water (I do use my filtered water and notice a difference in the taste)
1 apple, cored, peeled and cut into little bits
1 cup of frozen apricots (or whatever you have on hand)
2 cups of frozen organic blueberries (See? Told you I wasn’t messing around)
2 tsp cinnamon (maybe more or less depending on the quality and potency of your cinnamon)
In a large pot, bring your oats and water to a boil, then add the apple and cinnamon and allow to simmer covered on med-low for about 15 – 20 minutes, stirring occasionally. When the oatmeal is cooked, add your frozen fruit, stir it in, and let sit on low for about ten minutes, as the frozen fruit will cool the oats. (I don’t boil the berries because I’m hoping some of the enzymes will stay intact. Whether or not the enzymes are still in tact after freezing is up for debate. Either way, the berries are part of what make this dish superhuman, so I don’t mind either way.)
Mix it well, and when everything is heated through, serve up a desired portion and top with your accessories of choice.
If you’re anything like Kev, that will include a few tablespoons of maple syrup. 🙂 Leaves me wondering if we ever really need to grow up.
