overnight oats
Working one on one with clients is hard, because most people need everything to be easy.
As we know, eating well isn’t always fast and effortless, so having a few recipes on hand to get people started with new, awesome foods has been very helpful. My Overnight Oats are one of these recipes.

Oats are high in fibre and can help remedy depression. Berries are delicious and packed with youth-enhancing antioxidants. Hemp hearts have omega 3s, as well as lots of protein. Coconut milk is a tasty alternative to diary, and maple syrup…maple syrup tastes damn goooood. And it has minerals and stuff. ūüėČ
Put it all together, and you’ve got Jenny’s Overnight Oats. When my friend Cari Snell¬†first introduced me to¬†this delightful¬†breakfast back in Nutrition School, I was ecstatic and I ate it every day. Then I got sick of it, so I abandoned it for six months. Now I’m back to it with renewed appreciation because my clients love it, and because it’s so freakin’ simple, it makes my job easier!
Part of the beauty of Overnight Oats is that you¬†can take them with you if you’re on the run in the morning. You prep them the night before, giving the oats time to soak and soften, and they’re¬†ready to rock when you’re flying out the door. They’re portable (with lid, obviously), nutritious and super yummy. If you’re on a low carb protocol, or low sugar, cut the tbsp of maple syrup to 1 tsp.
Ingredients ~
3/4 cup of organic rolled oats (Not quick oats! You can use steel cut, but they will be much more chewy.)
3/4 cup of berries of your choice, fresh or frozen
1 tbsp maple syrup
1 tsp ceylon cinnamon
1 tbsp chia seeds
1 tbsp flax, freshly ground
A couple walnuts, loosely chopped
1 tbsp hemp hearts
About 1 cup of coconut/almond milk, unsweetened, or however much it takes to fill up your jar
Directions ~
In a medium size Mason jar, alternate layers of oats and berries with 1/4 cup of oats, then berries, then chia (no chia on the bottom because it gets clumpy) so it looks all parfait-ish. Top with seeds and walnuts, cinnamon and maple syrup, and then add your milk last. Make sure the milk saturates all the way through so your oats soak it up. This is an excellent opportunity to use my Homemade Hemp Milk, which will taste far better than anything you can get in a box, guaranteed.
Let your Overnight Oats sit in the fridge overnight, and enjoy them like crazy in the morning!
